Your special requirements
We all have preferences. We will be happy to discuss any special requirements you may have before your function, and present you with a buffet to suit your needs.
If waitress service is requested, we will call at the venue beforehand, to ensure perfection on the day.
Our sandwiches are normally supplied in a mixture of wholemeal and white breads. If you would like only one or the other, just let us know in advance.
Our menus contain a high percentage of items appealing to vegetarians, but let us know if you have any special needs.
For instance: we can offer gluten-free sandwiches at no extra cost, or we can fall in with your special colour theme.
Making our own cakes enables us to add a little extra individual style where it is wanted.
Fillings
The following fillings are typical, and a seasonal assortment is supplied:
Sandwiches and bridge rolls:
Red salmon and cucumber,
Free-range egg, mayonnaise and cress,
Turkey and cranberry sauce,
West Country cheddar cheese and home-made chutney,
Baked ham and tomato,
Home-roasted beef and horseradish sauce,
or home-roasted beef, dijon mustard and watercress,
Tuna, mayonnaise and rocket.
Savoury tartlets and quiches:
(all fillings have an egg base)
Mediterranean roasted vegetables,
Spinach and ricotta cheese,
Ham, bacon, cheese and tomato,
Ham, mushroom and tomato,
Asparagus and sweet red pepper,
Sundried tomato, toasted pinenuts and courgette,
Goats cheese and walnut,
Lancashire cheese and caramelised red onion.
Mini pasties:
Cornish (organic minced beef, onion, potato and turnip).
Vegetarian 1 (diced carrots, onion, turnips and potato, with chopped fresh herbs and cheddar cheese).
Vegetarian 2 (chopped leeks, mushrooms, walnuts and Lancashire cheese)
Roulades:
Blue Stilton cheese, apricot and almond.
Smoked salmon, cream cheese and chopped fresh parsley.
Savoury skewers:
Chicken breast pieces, roasted ham and tomato
Feta cheese, sweet pepper and black olive.
Dips and dippers:
Cocktail sausages with a mustard mayonnaise dip.
King prawns with a sweet chilli dip.
